Cheese soufflé with warm soup of red-fruits and vegetables

Ingredients
8 yolks
50 gr sugar cooked at 121°
300 gr whipped cream
700 gr fresh cheese (ricotta, crescenza, philadelphia, mascarpone)

Preparation
Whisk the yolks with the sugar and add all the other ingredients.
Put the mixture into small moulds.

For the soup
Put the red-fruits into a casserole with some sugar and cook them for about 10 minutes. Cut the vegetables (celery, cucumber, courgettes) into small pieces after having boiled them for a while. Add them to the fruit soup.

Arrangement of the dish
Put a spoonful of the soup on the dish and put some soufflé slices on it. Add some mint leaves.
